1 cup white sugar
2 tablespoons all-purpose flour
3 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups water
2 lemons, juiced and zested
2 tablespoons butter
4 egg yolks, beaten
1 (9 inch) pie crust, baked
4 egg whites
6 tablespoons white sugar

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
To Make Lemon Filling: In a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt. Stir in water, lemon juice and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter. Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture. Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat. Pour filling into baked pastry shell.
To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.
Bake in preheated oven for 10 minutes, or until meringue is golden brown.

Hey I have a great Lemon poppyseed cake recipe that I just love. Its on the internet, and I must not take the credit, but it is the best.

LEMON POPPYSEED CAKE   

1 (18.25 oz.) pkg. lemon cake mix without pudding
1 (3.4 oz.) pkg. instant lemon pudding mix
1 c. water
1/2 c. vegetable oil
4 lg. eggs
1/2 c. chopped pecans
1 tbsp. poppyseeds
2 tbsp. sugar
1/2 c. lemon juice

Combine first 5 ingredients in a large bowl; beat at medium speed with an electric mixer until blended. Stir in pecans and poppyseeds. Pour batter into 3 (8 x 3 1/4 x 2 1/2 inch) greased aluminum loaf pans. Bake at 325 degrees for 40 minutes or until a wooden pick inserted in center comes out clean, shielding with aluminum foil after 30 minutes. Cool in pans 10 minutes on wire racks. Combine sugar and lemon juice; gradually brush over cakes. Let cool completely on wire racks; refrigerate up to 1 week or freeze up to 3 months.

Killer Kool-Aid     LOL ROTFLMFAO!!!!!!!!!!!!!!!!!!!!!!!!! Grin Grin Wink Tongue Tongue Tongue


     1 ounce Amaretto
     1 ounce Melon Liqueur
     1/2 ounce Vodka
     2 1/2 ounces Cranberry Juice
     2 1/2 ounces Lemon-Lime Soda
Stir vodka in a highball glass, add ice, and then fill with cranberry juice and lemon-lime soda.

Here's another one for all the Kool-aid fans, especially the one's who accused FSP members of drinking Kool-aid, something I haven't done for years...I do like Jello shots though. Hey I might try this one though!  Cheesy

**** You Up Koolaid Drink Recipe

1.0 Dash  Lemon juice
2.0 cups Sugar
1.5 cups Vodka
2.0 quarts Water
2.0 packages Kool-Aid
Directions:    poor the contents into a pitcher, putting koolaid first, then sugar, then vodka,
then water, then the dash of lemon juice, then shake. good as hell and gets drunk quickly

Well as long as we are on alcoholic elixirs one of my favorite things in the summer is Jungle Juice

1 Fifth of Vodka
2 Cans Frozen Mixed Berry Punch w/water added
2 Packages Frozen Mixed Berries
2 Cans of Beer
1 Bag of Ice

Put all contents in a large container and serve!


Hillbilly Lemonade

1  1 Gallon Container (Sun Tea Jar works great)
Ice
1 Fifth of Vodka (Flavored ones work well too)
4 Lemons
4 Limes
1 1/2 Cups of Sugar

Dish Towels

Take the lemons and limes and squeeze all of the juice out of them and cut and quarter what is left of them and put them in the jar.  Add the sugar, and vodka, fill container to the top with ice.  This is a group effort, take the dish towel and wrap the jar in it and shake, when your arms get tired, pass it to the next person to shake, and repeat until you have at least 1/2 liquid or more in the container.
